Made as an ode to the Northern Rhone masters, we cab mac the fruit for about two weeks, before gently foot stomping every few days for a couple of weeks. Gentle extraction builds tannin. Pressed to stainless to finish ferment, and racked to old puncheons and barriques for elevage. After around 12 months in old oak, the wine is racked to stainless for a couple weeks before bottling.
