A dance of freshness and texture. Viognier, Marsanne, and Roussanne from Heathcote.

This was one of our favourite wines to make, an incredible array of flavours, and textures, backed up with incredible acidity.

A key to this wine's success is co-ordinating a number of well timed picks. We pick each variety separately based on flavour. With this wine, we are carefully considering the texture, weight, and freshness. Picking each variety separately gives us the ability to hone in here, and deliver a textural white with well balanced freshness.

Vineyard:
Planted on ancient volcanic Cambrian soil that runs through a small slice of the Heathcote wine region. This poor soil throttles yields, producing incredibly intense fruit. Grown by Ritchie, at the site formerly known as ‘Wanted Man’. This was some of our favourite fruit to come in the shed during vintage. A broad spectrum of intense flavours, with great acidity.

Winemaking:
All varieties picked separately based on flavour and phenological ripeness. All fruit is fermented individually. All varieties are whole bunch pressed, fermented in stainless steel. 50% aged in old oak, 50% in stainless steel. Full malo. Racked back together two weeks before bottling with 55ppm SO2 added.

"Waxy textured, fresh feeling, a touch of slip and slide, some richness here but metered with a frisky cut of younger feeling stone fruit amongst the apricot and light coconut characters. A ticklish, cool, Real Lemonade finish. Delightful drinking. So tasty."
