- Vineyard
Grown in Southern Heathcote, where the Harcourt Granite massif meets gravelly clays near Kyneton. A cooler climate site, affectionately known as 'Rupert's Ridge, located in the south western corner of the Heathcote GI. Vibrant, restrained, mineral wines are produced on this cooler site, a unique expression of the region.
- Winemaking
One of our last picks to come in, the fruit was destemmed, and cold soaked for a few days in stainless steel. Pressed off back into stainless for a natural ferment, where it sat on gross lees over winter. Full malolactic fermentation.
